A Perfect November Salad
I know. It’s November. The last thing you want is a salad.
But hear me out.
Because this one is honestly delicious. It combines yummy, earthy fall flavors that you’re craving this time or year yet gives you a break from the heavy, calorie rich dishes that usually emerge around the Thanksgiving season.
This salad came together as a result of leftovers. Leftover lentils and leftover roasted squash. I threw them on a bed of arugula, topped with some goat cheese and drizzled some lemon and olive oil.
It. was. amazing.
I’ve been recreating similar salads all week, substituting roasted carrots for squash and quinoa for lentils. Same flavor profile, different ingredients.
